Almond Flour Pancakes, gf, df

When I was growing up, back in the 70’s, we ate pancakes just about every weekend. I also loved making them for my boys when they were kids. These days, like many of you, I stay clear of gluten and dairy, though have found great alternatives for old favorites that are healthy and delicious.

The pancake recipe below is such. You can doctor it up to your liking - add in bananas or berries or top with cinnamon, or a dairy-free yogurt (Cocojune!) Any way you slice them, they’re sure to be a fun, “blood sugar balancing” treat and loaded with protein, healthy fat and fiber! Enjoy!

Almond Pancakes, gf, df

INGREDIENTS

2 tbsp almond meal 

2 tbsp Coconut flour 

1 organic free range egg 

1 organic or free range egg white 

1/4 cup sparkling water 

Pinch of salt 

Coconut oil for cooking

METHOD 1. Mix all ingredients together in a bowl until there are no lumps 2. Use 1/4 cup measure to spoon mixture into pan oiled with coconut oil 3. Look for bubbling or browning of the edges before flipping 4. Makes about 4 small pancakes
